I sliced up a bunch of carrots, put the carrot slices into a bowl, and added about a tablespoon balsamic vinegar and a teaspoon chili oil.

It was a great snack, took all of about 3 minutes to prepare, and was much more interesting than munching on mini carrots.

Chicken and Green Veggie Curry

OK folks, here's what I made for dinner tonight. It was delish. (all quantities approximate)

Chicken and Green Veggie Curry

1.5 lbs boneless chicken, cubed (or if vegetarian some tofu or seitan or other non-meat stuff. Potatoes would be really good in this.)
1 large red onion, diced
6 cloves garlic, diced
1 green bell pepper, diced
1 cup green beans, diced
1 cup baby zucchini, diced
1/2 cup frozen peas
2 tsp Penzey's Maharajah curry powder
sesame oil
salt and fresh ground black pepper to taste

Saute the garlic, onion and bell pepper in the oil until the onion caramelizes. Add the spices and saute about a minute more. Add the chicken, brown on all sides.

Add some liquid -- water, bouillon, white wine, balsamic vinegar, your choice (I used water tonight) -- to deglaze the pan and provide a little steam for the veggies.

Add the veggies, stir well, cover and allow to simmer for about 15 - 20 minutes. Adjust seasoning if necessary.

Serve with rice or couscous.

Okra would be good. I got some baby zucchini in the supermarket, but full size ones would work just as well. As would broccoli or greens.

Nick's Chocolate Fudge Pie

A friend of the family made this pie and it was wonderful. If you watch for butterfat in your crust and chips, it is vegan too.

Put 1 bag (12 oz) of Chocolate chips in a bowl and melt in the microwave, they need to be pour-able when melted.

Pour in to a blender or food processor and add 1 (12 oz) block of silken firm tofu and a splash of vanilla extract (or the extract or liqueur of your choice) Blend until fully mixed and smooth.

Pour in to a 8" graham cracker crust, and chill to set.

Serves 12

Goes great with Tea or coffee, and is delicious topped with whipped cream (or a non-dairy topping?)

My favorite recipe:

Sift together
1 cup flour
1-1/2 tsp baking powder
1/2 tsp salt.

Add:
2 beaten eggs
1/2 cup milk

Stir until batter is smooth. Dip the onions and place into the boiling oil. (lighter batter)


DH's favorite recipe:

1/2 cup milk
1 beaten egg
flour with salt and pepper
Beat milk and egg together. Combine flour and seasonings. Dip onions into milk-egg mixture, then roll in seasoned flour. Fry. (heavier breading)

Green Pea and Egg Soup

On the Food Channel, I just saw a lady making green pea and egg soup, which I'd never heard of before. Makes me wish I could eat potatoes.

Saute onions, garlic, and cubed raw potatoes about 10 minutes. Add a 24 oz can of diced tomatoes and 1 and 1/2 cans of water. Simmer until potatoes are done. Add 2 cans of peas, including the juice. Simmer 1/2 hour. Float raw eggs on top and poach until done. The cook added 11 - an odd number for luck. slurp.
