This recipe is from my Mom. Enjoy, it's delicious

2 cup milk
3 egg yolks
3/4 cup sugar
3 tbsp flour
1 good pat butter

For Chocolate Pie: add 1/4 cup cocoa in sugar.

Put flour into sugar and stir. Mix into milk in pan. Get hot. Beat yolks. Warm yolks with hot milk. Add yolks to pan. Heat until thick. Add butter. Stir in.

Death by Upside-Down German Chocolate Cake

I think I can feel my arteries hardening and blood sugar blowing as the cake cools in the pan.

1-1/2 cup flaked coconut
1/2 cup chopped pecans
1 pkg German chocolate cake
1 pkg cream cheese softened (just to make me feel better, I used 1/3 calorie cheese)
1/2 cup butter or (god forbid) margarine (go for the gusto here folks, don't quibble)
4 cups powdered sugar

Preheat oven to 350° F (180° C), Grease and flour 9" x 13" cake pan.

Spread coconut evenly on bottom of pan. Sprinkle with pecans and 3 tbsp brown sugar.

Prepare cake mix as directed on package. Pour over coconut and pecans. Combine cream cheese and melted butter in bowl. Beat at low speed with electric mixer until creamy. Add powdered sugar beat until blended and smooth. Drop by spoonfuls evenly over cake batter.

Bake 45-50 minutes or until toothpick inserted halfway comes out clean. Cool completely in pan. to serve, cut and turn upside down (top side up) on plate.

1 box chocolate cake mix
1 can dark chocolate icing
1/2 cup sugar
2/3 cup shortening
1 tsp vanilla
1/3 cup milk
1/4 cup salt
1 tsp water
1 cup powdered sugar

Simplest way: Prepare cake in a 9"x13", let cool.

Meanwhile, beat sugar, shortening, vanilla, milk, salt and water for 7 minutes. Add powdered sugar and beat another 5 min. Don't skimp on the beating-- the fluffy filling is key!

Spread the fluffy filling over the top. Warm the icing in the micro a few seconds at a time until smooth enough to pour over the top. Cool until set and serve.

Prettiest way: bake in two round or square layers, split, fill and frost.

Baked Potato Soup

I modified this recipe, of course. I had to call my daughter's husband and have him come take half of it home. We have enough for tomorrow. I could barely eat a soup bowl-full. It was very filling and yummy. I changed it a little. I will put my changes in parenthesis.

Baked Potato Soup

2/3 cup Butter
2/3 cup Flour
7 cups Milk
4 large Baking Potatoes*, baked, cooled, peeled and cubed (about 4 cups)
4 Green Onions, sliced (I used a small bunch. It was not too much. I used a 1/2" of the green part.)
12 strips of Bacon, cooked well and crumbled
1-1/4 cups shredded Cheddar Cheese (I used 8 oz. shredded)
1 cup (8 oz) Sour Cream
3/4 tsp Salt
1/2 tsp Pepper

*I used 4 large baking potatoes (6" long or so) makes about 8 cups, cubed. I baked the potatoes after oiling and putting foil around them, cooled them and removed the foil, then put in the fridge overnight in a covered dish, before peeling and cubing them. They stayed cubed and had a nice toasted bit under the peel.

In a large soup kettle or dutch oven, melt the butter over low heat. Take off the stove and blend in the flour until smooth; return to heat and gradually stir in the milk. Stir constantly until slightly thickened. Add potatoes and onions.

Bring to a boil (just starting to bubble), stirring constantly. Reduce heat and simmer for 10 minutes. (I still stirred constantly.) Add remaining ingredients; stir until cheese is melted. Serve immediately.

Yield: 8-10 servings. Recipe from Taste of Home's Big Book of Soup. Page 92.

Rich and delicious. My husband only could make yummy sounds as he ate. (grin)

My ex-husband went through various vegetarian phases, so I used to do a lot of vegetarian cooking, some of it rather involved, but there are easy meals if you're a meat-and-potatoes cook.

Mac and cheese unless she's vegan. From scratch, of course. It's not hard and your kids (Linda, I don't remember if you have young kids and hey, since it's in your neck of the woods - if you're who I think you are! - will you be at SOAR this year?)

As Erin (I think) said, anything lentils and rice. Fry onions and garlic, add cooked lentils and tomatoes (if you like) and seasoning (cumin, pepper, cayenne if you like, etc) and add some more veggies if you like. Depending on spices, you can serve with cheese or chutney or salsa etc. For the meat-eaters at the table who feel the meal lacks something, grill a couple of sausages to serve alongside.

Buy some fresh (in the refrigerated case, don't get the dried stuff) filled pasta and serve with either a tomato sauce (from a jar if you must) or make your own alfredo, it's not hard and is quick: After the pasta is JUST cooked, add a hunk of melted butter (a few tablespoons), some whipping cream or half-and-half (half a cup or less) and a good amount of fresh parmesan (not the stuff in the green can, a third of a cup or so). Keep stirring over gentle heat until it thickens up. Add more cheese if you like.

As others have mentioned, burrito/taco/pseudo-Mexican is good too, as you can add meat to some of them (for the non-vegetarians).

There's always pizza. I know that for most Americans pizza almost inevitably implies meat, but it's totally a cultural thing, as it was highly unusual back in the Old Country. Living on the coast, the usual non-dairy protein on pizza was seafood, but vegetarian pizza was definitely the norm for us. Mushrooms are good (I'd toss them in a little oil first), as are artichoke hearts (get the marinated ones, they're tastier and less likely to dry out), onions, green peppers, olives, and my favourite, anchovies - though I guess the latter won't fly for either of you!

Easy Black Bean Burritos

Black bean burritos are great.

Tortillas (white flour) or your choice. Spoon on black beans, cheese, and heat in microwave. Then add cilantro, tomatoes, onions, tomatoes, black olives, sour cream and anything else your little heart desires.

Deck with salsa, taco sauce, etc
