From the original Moosewood Cookbook.
Combine:
4 cups cold tomato juice
1 small onion minced
2 cups diced tomatoes
1 cup green pepper minced
1 tsp honey
1 clove garlic (crushed of course)
1 cucumber diced
2 scallions chopped
juice of half a lemon and 1 whole lime
2 tbs wine vinegar
1 tsp tarragon
1 tsp basil
dash of cumin
1/4 cup fresh chopped parsley
dash of tabasco
2 tbsp olive oil
salt to taste
black pepper to taste
Chill for at least 2 hours and you can puree it if you want to.
