Caramelized Banana Recipe

I cook these all the time :)

Simple and all you need is a cup of white sugar, a teflon coated pan, and sliced length-wise bananas (or whole or sliced-across).

**Put the sugar in the pan over low to moderate heat. Stir constantly until the sugar melts and begins to turn a light golden. Remove from heat, slide in the bananas, return to heat, gently turn but be careful not to splash the hot caramel on you. If the sauce starts to get too thick add a few drops of hot water.

Don't let the caramel get too dark. It gets bitter when you do that.

Then serve them in a heat proof dish or let them cool and serve over ice cream. As it cools it thickens a lot.

This is great using very ripe yellow plantains, too.
