Sour Green Beans

Sour Green Beans

All of these items are added in amounts to taste; if you like lots of bacon and onions, then cook a whole onion and 1/2 lb. of bacon. Do more or less according to your taste.

Fry diced bacon until crisp. Remove bacon from pan, then add chopped onions and fry in bacon grease until tender. Pour in vinegar (white or cider) to taste (again, a lot of vinegar if you like sour stuff, or very little for less flavor). Bring to a boil, and add bacon, stir mixture together. Then pour over cooked green beans, and stir again.

I hope you like it!

Onion Tart

Onion Tart

Mary had written: I took an onion tart to Cummington last year, and it quickly disappeared. This got the reply of: Please share this recipe. I love anything with onions and this sounds intriguing.

Winging it a bit, which is how I tend to cook. Can't remember if this what I did exactly, but if I were going to bake it right now:

Make a single crust pie crust; or even a larger one, if you want to use a pizza pan. I think I made a single crust. I probably made it with olive oil, or olive and canola. I think I baked it half way. A cream cheese crust would work well too.

For the topping, and you should probably make the topping while the pie-crust is chilling in the fridge, thinly slice a lot of onions. Maybe 3 or 4 good sized onions. Sauté in olive oil (don't need extra virgin, just a decent 100% olive oil), and cook them down until they're nice an mushy. Add some thyme, salt and pepper if you like, and sliced calamata olives. Let it mellow awhile, even with the lid on the pot.

Spread the topping on the pie crust and bake until done.

Onion rings (2 different batters)

Onion rings (2 different batters)
My favorite recipe:

Sift together
1 cup flour
1-1/2 tsp baking powder
1/2 tsp salt.

Add:
2 beaten eggs
1/2 cup milk

Stir until batter is smooth. Dip the onions and place into the boiling oil. (lighter batter)

DH's favorite recipe:

1/2 cup milk
1 beaten egg
flour with salt and pepper
Beat milk and egg together. Combine flour and seasonings. Dip onions into milk-egg mixture, then roll in seasoned flour. Fry. (heavier breading)

Sheri's Guacamole

Sheri's Guacamole
  • 1 huge Puerto Rican avocado or 4-5 small ones- spooned into a large plastic bowl
  • 1 huge vine ripened tomato or 2-3 VR romas- chopped finely
  • 1 med. Spanish white onion or any sweet one- chopped finely. Sometimes I use a sweet red onion.
  • 1 bunch cilantro-chopped finely or if you are in PR, Cilantro
  • 1 fresh jalapeno pepper halved and sliced thinly with seeds (or without seeds if you can't stand the heat) Note: wash your hands right after or you'll be sorry) or a shake or two of red pepper flakes
  • opt: 1/2 a fresh green, red and/or yellow bell pepper chopped finely
Toss all in a bowl -loosely mash/stir together and squeeze 1/2 a fresh lime over all (lemon works, too).

That's it. I like mine chunky, so I don't mash it too much. I love it served as a topper with sauteed fresh ocean snapper fillets that have been dredged, then breaded in a 50/50 mixture of flour and ground hazelnut crumbs! That is a perfect example of Caribbean cooking.

jp's Creamed Onions

jp's Creamed Onions

My basic but quite decent recipe is:

Boil some small boiler onions (peeled but whole) or pearl onions until mostly cooked. Make a white sauce (bechamel). Put the cooked onions in the white sauce and heat gently. Season with salt and pepper. It's simple and plain, but well-appreciated at the elaborate holiday meals. One can easily come up with interesting variations, but sometimes you need a simple dish to complement a fancier menu.

I can give you more exact times and quantities if desired.

Ideas for variations -- add garlic (everything is better with garlic, right? roasted garlic puree might be quite yummy). Make the sauce with white wine instead of or in addition to milk. Top the dish with toasted/seasoned bread crumbs. Add various herbs or spices. Dye the white sauce some unnatural color, like blue (well, maybe not).
