Chocolate Ganache
Yield: 1 cup
Serving Size : 1


4 oz. good quality bittersweet chocolate
4 oz. heavy cream

Chop chocolate fine and place in small bowl. Place cream in small pot and bring to a simmer. Pour simmering cream over chopped chocolate and stir until smooth.

Cool to room temperature before glazing.

Carrot, Avocado, and Cream Nourishing Mask

1/2 cup heavy cream
1 carrot, cooked and mashed
1 avocado, peeled, pitted, and mashed
3 tbsp honey

Procedure:
Combine ingredients in a bowl.

To use:
Spread over your face and neck. Relax for 15 minutes. Rinse with cool water and pat dry.

Save the avocado pit. It is a wonderful massage tool. Simply rub it and roll it against your skin to soothe tired muscles.




Cucumber Avocado Facial Mask


1/2 cup chopped cucumber
1/2 cup chopped avocado
1 egg white
2 tsp powdered milk

In a blender combine all of the ingredients until they form a smooth, paste-like consistency. You can apply the mask immediately or refrigerate it for 30 minutes.

Apply 2 tablespoons of the cucumber avocado mask to your face and neck in circular upward motions. Leave the mask on for 30 minutes, or until dry.

To remove the mask simply rinse your face and neck with warm water, followed by a cold water rinse. Finally, pat dry your face and neck.




Egg Yolk, Avocado & Mud Facial Mask (best for oilier skin types)

Clay or fuller's earth mud is available in powder form at any health food store. Mix 1 tablespoon dry clay with 1 egg yolk, 1/4 of a mashed avocado and enough witch hazel to create a smooth mixture. Mud dries excess sebum while the egg yolk and avocado replenish lost moisture. Witch hazel tones.

(Inputer's Note:
As an ex-potter, I can attest to clay masks for oily skin as working well. I used to spread clay slurry from my potter's wheel on my face while making pots. I got a facial as I worked. laughing...)

Mash an avocado and heat it in a double boiler until warm. A good dry skin moisturizer, this mask provides protein and vitamins.




Avocado and Honey Moisturizer Mask (For Dry Skin)

Mash up 2 tablespoons avocado, mix with 2 tablespoons honey and 1 egg yolk.

Apply to face, leaving on about 15-20 minutes. Rinse with warm water. Finish with a rinse of the vinegar pH balancer.



Creamy Avocado Mask

Mash 1 tablespoon ripe avocado, add 1/2 tsp honey and mix. Stir in a little almond meal until creamy. Apply to clean skin, leave on for 15-20 minutes and wash off with lukewarm water. Finish with a rinse of the vinegar pH balancer.



Avocado Honey Mask #2 (For Dry Skin)

Peel one ripe avocado, mash the meat into a creamy texture. Heat over a double boiler until just warm,incorporate 1 Tbsp of honey. Massage into the face and neck. Finish with a rinse of rosewater, witch hazel or vinegar pH balancer.

  • 1 huge Puerto Rican avocado or 4-5 small ones- spooned into a large plastic bowl
  • 1 huge vine ripened tomato or 2-3 VR romas- chopped finely
  • 1 med. Spanish white onion or any sweet one- chopped finely. Sometimes I use a sweet red onion.
  • 1 bunch cilantro-chopped finely or if you are in PR, Cilantro
  • 1 fresh jalapeno pepper halved and sliced thinly with seeds (or without seeds if you can't stand the heat) Note: wash your hands right after or you'll be sorry) or a shake or two of red pepper flakes
  • opt: 1/2 a fresh green, red and/or yellow bell pepper chopped finely
Toss all in a bowl -loosely mash/stir together and squeeze 1/2 a fresh lime over all (lemon works, too).

That's it. I like mine chunky, so I don't mash it too much. I love it served as a topper with sauteed fresh ocean snapper fillets that have been dredged, then breaded in a 50/50 mixture of flour and ground hazelnut crumbs! That is a perfect example of Caribbean cooking.

Green Tomato Pickles (from Katherine)

I have a delicious recipe for green tomato pickles. It is actually about half sliced onions and half sliced green tomatoes and involves molasses. It's great with cold meat. It's from my English (NZ actually) grandmother. Don't know where she got it.

Okay, I pulled out my family cookbook and here it is:

Take 2 quarts green tomatoes, slice them and sprinkle with salt, let stand for 24 hours; then strain off liquor.

Mix together:
1 qt malt vinegar
1/2 pint dark molasses
1 tbsp mustard, English
1/2 tbsp curry powder
1/2 tsp mixed spice (pickling spice)

Heat to nearly boiling; then put in tomatoes and 3 large sliced onions; 1 small egg-spoon cayenne pepper (this is smaller than a teaspoon). Cook 5 min. can add flour for thickening.

Then I guess you put them in sterile jars. They have to sit for at least a month so the flavor develops.

I haven't made this, but my mother has and it's wonderful. I also have a good recipe for apple chutney if anyone wants it.
